Speedy Kimchi Fried Cauli Rice

MADE WITH RICED CAULIFLOWER 

This gut-healthy meal by @talldadtinykitchen is perfect for using leftovers up from the fridge. Enjoy it during the week or meal prep it for a super-healthy lunch to go. 

Ingredients:

  • 1 Pouch Fullgreen Riced Cauliflower
  • 100g red cabbage (finely sliced) 
  • Half red pepper (diced) 
  • 3 green onions (sliced) 
  • 1 brown onion (finely sliced) 
  • 2 garlic cloves (crushed) 
  • 2 carrots (chopped and sliced) 
  • 1 red chilli (sliced) 
  • 1 tbsp Gluten-free soy sauce 
  • Juice from 1 lime 
  • 1 tsp sesame oil 
  • 2 eggs 
  • 2 tbsp Kimchi 

Method:

  • Heat some oil in a pan and add the garlic and onion, stir fry until softened
  • Add the cabbage, red pepper, carrots and chilli to the pan and stir fry until cooked, adding the soy sauce and sesame oil for the final few minutes
  • Add the cauli rice and gently stir until everything is nicely coated
  • In a separate pan, fry the eggs
  • Add the cauli rice to the plates, top with the egg, kimchi and some chopped green onions to garnish
