MADE WITH RICED CAULIFLOWER & BROCCOLI

This veggie packed fried rice by @cookinwithannag is a big win for the mid week meal plan.  Make the sesame soy dressing in advance and leave in the fridge overnight to dial up those flavors even more.

Ingredients:

  • 2 Pouches Fullgreen Riced Cauliflower & Broccoli
  • 1/2 yellow onion, chopped 
  • 1/2 red bell pepper, chopped 
  • 1/2 cup carrots, chopped 
  • 1/2 cup frozen peas 
  • 2 eggs 

For the sesame soy sauce:

  • 3 tbsp soy sauce 
  • 2 tbsp rice vinegar 
  • 1 tbsp honey 
  • 3 cloves garlic, minced 
  • 1 tsp sesame oil 
  • sesame seeds 
  • 1 tbsp sriracha 

Toppings:

  • green onion
  • cilantro
  • sesame seeds
  • chilli crisps

Method:

  • Whisk the sauce ingredients and set aside
  • Sauté chopped veggies + peas in a bit of sesame oil.
  • Add the eggs and scramble together in the pan
  • Once cooked, set aside and add the riced veggies to pan, moving everything around for 2-3 minutes.
  • Add the rest of veggies + the pre-made sesame soy sauce, sauté for 3-4 mins until the excess liquid is absorbed
  • Add toppings and enjoy!
