Ingredients
- 2 packs of Fullgreen Cauliflower Rice (400g / 14oz)
- 4 strips of lean Bacon (or vegan alternative)
- 2-3 Scallions/Green Onions
- 2 Bell Peppers
- 2-3 cups/250g of Broccoli Florets
- 2 large Eggs
- Soy Sauce - or Coconut Aminos
- Red Chillies
- Salt & Black Pepper, to taste
- Sesame Seeds (optional)
- Bagel Toppers (optional)
Method
- 1 Warm a skillet over a medium high heat. Add the Bacon (or vegan alternative) and cook until crispy. Set it aside on a paper towel to let the fat soak away.
- 2 Discard any excess bacon fat and wipe with the skillet with a paper towel before adding a dash of Olive Oil and re-heating over a medium high heat.
- 3 Add the 'whites' of the Scallions and Bell Pepper slices and cook until soft.
- 4 Add the Broccoli florets, a little Salt and Pepper, and a tiny splash of water. Then cover the skillet for 30 seconds to 'flash steam' the Broccoli (if you're using frozen, just let it cook through).
- 5 Now add the Fullgreen Riced Cauliflower, a good splash of Soy Sauce and stir everything together and lower the heat.
- 6 Make two little troughs in the 'rice' mixture before cracking an Egg into each. Then cook for a further 2-3 minutes for soft yolks, or until the eggs are done to your liking!
- 7 Dish into two bowls and top with Bacon bits, the green bits of the chopped Green Onions, slices of Red Chill and anything else you fancy (such as Sesame Seeds or Bagel Toppers)
- 8 Serve and enjoy!!
