Ingredients
- 2 Pouches Fullgreen Riced Cauliflower
- 1 tbsp olive oil
- 1 garlic clove crushed
- 1 red chilli finely chopped
- 1 red pepper finely sliced
- Handful fine green beans
- Half zucchini cut into ribbons or strings
- 200g fresh or frozen cooked wild prawns
- 1 tsp honey
- 1 tbsp lime juice
- 2 tsp sesame oil
- 1 tbsp soy sauce
- Fresh mint/cilantro to garnish
Method
- 1 Heat the oil in a pan and fry the garlic and chilli until fragrant. Then add the green beans and red pepper and cook for 5 mins.
- 2 Add the cauliflower rice to the pan and cook for 2 mins more.
- 3 Heat the prawns in a separate pan, adding a little seasoning.
- 4 Whisk together the honey, lime juice, soy sauce and sesame oil.
- 5 Add the riced cauliflower to a bowl, add the cooked prawns, drizzle over the dressing and garnish with some fresh cilantro and mint.
