Winter Warmer! Chunky Beef Chilli with Cauli Rice

Ingredients

  • 2 packs of Fullgreen Cauliflower Rice (400g / 14oz)
  • 400g/14 oz of Beef Chuck Roast
  • 2 Onions, diced
  • 1 clove of Garlic, minced
  • 2 Peppers, seeded and chopped
  • 1 tin of chopped Plum Tomatoes
  • 2 tbsp of Tomato Paste
  • 1 can (14oz) of Kidney Beans, rinsed and drained
  • 300ml/1 cup of Beef Stock
  • 1 tsp of dried Chili Flakes
  • 1 tbsp of Chipotle Paste
  • 1 tsp of Smoked Paprika
  • 1 tsp of Ground Cumin
  • Fresh Coriander
  • A little Olive Oil
  • Salt & Pepper to taste

Method

  1. 1 Chop the Veggies and flash fry the Onions, Garlic and Beef (with a little Olive Oil) in a frying pan over a high heat.
  2. 2 Once the Beef is sealed and browned a little, transfer it to a large pot or Slow Cooker and add all the other ingredients.
  3. 3 Leave to simmer on a low heat for 3-4 hours whilst you go out and do something more interesting!
  4. 4 When the beef is tender and the 'gravy' has thickened beautifully it's ready!
  5. 5 Steam some Broccoli and heat two packs of Cauliflower Rice, season the chilli with Salt and Pepper, and top with freshly chopped Coriander
  6. 6 Serve and enjoy!!
