Ingredients
- 2 packs of Fullgreen Cauliflower Rice (400g / 14oz)
- 400g/14 oz of Beef Chuck Roast
- 2 Onions, diced
- 1 clove of Garlic, minced
- 2 Peppers, seeded and chopped
- 1 tin of chopped Plum Tomatoes
- 2 tbsp of Tomato Paste
- 1 can (14oz) of Kidney Beans, rinsed and drained
- 300ml/1 cup of Beef Stock
- 1 tsp of dried Chili Flakes
- 1 tbsp of Chipotle Paste
- 1 tsp of Smoked Paprika
- 1 tsp of Ground Cumin
- Fresh Coriander
- A little Olive Oil
- Salt & Pepper to taste
Method
- 1 Chop the Veggies and flash fry the Onions, Garlic and Beef (with a little Olive Oil) in a frying pan over a high heat.
- 2 Once the Beef is sealed and browned a little, transfer it to a large pot or Slow Cooker and add all the other ingredients.
- 3 Leave to simmer on a low heat for 3-4 hours whilst you go out and do something more interesting!
- 4 When the beef is tender and the 'gravy' has thickened beautifully it's ready!
- 5 Steam some Broccoli and heat two packs of Cauliflower Rice, season the chilli with Salt and Pepper, and top with freshly chopped Coriander
- 6 Serve and enjoy!!
